When the green coffee berries turn red they are called cherry. "Picking Cherry" and "Buying Cherry" signs appear on the side of the road when it's harvest time. Pickers are paid by the bag, which can sometimes weigh over 100 lbs. The cherry is then pulped and fermented to separate the beans. The beans are washed and left to dry. The dried light green beans can now be stored as parchment to be roasted or sold off to wholesalers.
