The Process
When the green coffee berries turn red they are called cherry. "Picking Cherry" and "Buying Cherry" signs appear on the side of the road when it's harvest time. Pickers are paid by the bag, which can sometimes weigh over 100 lbs. The cherry is then pulped and fermented to separate the beans. The beans are washed and left to dry. The dried light green beans can now be stored as parchment to be roasted or sold off to wholesalers.

Coffee
This is the branch of a Kona coffee plant. Inside these green berries are coffee beans. This particular coffee grows on the steep, volcanic, Kona hillsides of the Big Island. The geographic conditions and consistent weather allows for perfect growing conditions. 100% Kona coffee is very expensive, sometimes over $20 for a 12 oz. bag.
